In a heavy bottom saucepan, combine the sugar, water VITAGOS™ and salt.
Over medium heat, cook the sugary mixture without stirring until it becomes a light amber color and reaches 176°C (350°F).
Reduce the temperature to medium-low and whisk in the cream.
While stirring constantly, simmer for 2 min.
Remove from the heat, add the vanilla extract and transfer into a heat-resistant container.
Caramel should be kept in the refrigerator.
To be used as filling or topping for your favourite dessert product.
