Rich Eggnog Beverage

Rich Eggnog Beverage containing 11 g protein and 2 g VITAGOS™ per serving of 150 g.

Yield: 6 servings

Ingredients:

  • 488 g whole milk
  • 160 g whipping cream
  • 6 large egg yolks
  • 120 g sugar
  • 35 g Milk Protein Concentrate 85 (MPC 1850)
  • 12 g VITAGOS™
  • 5 whole cloves
  • ½ teaspoon of freshly ground nutmeg
  • ½ teaspoon of vanilla extract
  • Pinch of salt
  • Ground cinnamon (for garnish)

Directions

  1. Whisk the egg yolks and the sugar until the mixture is pale yellow.
  2. In a saucepan, combine the milk, cream, VITAGOS™, MPC 1850, cloves, nutmeg, and salt. Stir frequently over medium heat until the mixture reaches a simmer.
  3. Slowly whisk the hot liquid mixture into the egg mixture and return to the saucepan.
  4. Cook over medium-high heat while whisking constantly until the mixture starts to thicken slightly. Do not allow the mixture to boil.
  5. Remove from the heat, strain to remove the cloves, and stir in the vanilla.
  6. Pour into a container and refrigerate until chilled.
  7. Sprinkle with cinnamon when serving.

Notes:

  1. For a lighter version, whipping cream can be replaced by half-and-half or light cream.
  2. Eggnog should be kept in the refrigerator and consume within a week.
  3. As tolerances may vary from individual to individual, it is recommended not to exceed 2 servings a day.
